The fuchkawala (phuchka seller) of Kolkata is an integral part of the city’s cultural, social, and culinary identity, with a history deeply rooted in local street food traditions. The modern Kolkata-style phuchka solidified in the mid-20th century, particularly after the 1947 Partition of Bengal. It evolved from the pani ke batashe of Lucknow, replacing the original filling with mashed potatoes, chickpeas, and a distinct mix of tamarind, green chillies, and gondhoraj lime. The Vivekananda Park area in South Kolkata is considered a major hub for the city’s phuchka culture.
